Kickaround POG Tart Lemon Bars

Ingredients

Crust

2 cups all-purpose flour
1 cup butter, softened
1/2 cup white sugar

Filling

1 1/2 cups white sugar
1/4 cup all-purpose flour
3 eggs + 1 egg white
3/4 cup Kickaround POG Tart
Juice of 1 fresh orange, strained
Orange and lemon zest

Powered sugar, for sprinkling as topping

Method

Preheat oven to 350°F.

To make crust, blend 2 cups flour, softened butter, and 1/2 cup white sugar in a medium bowl until well mixed. Press mixture into the bottom of an ungreased 9" x 13" pan. Bake in preheated oven until firm and golden, about 15-20 minutes. Remove from oven.

While crust is baking, make filling. Whisk remaining 1 1/2 cups sugar and 1/4 cup flour in a medium bowl. Whisk in eggs, egg white, Kickaround POG Tart, orange juice, and zest until mixture is smooth. Pour filling over the baked crust.

Bake crust with mixture in preheated oven for 20-25 minutes. Set pan aside to cool completely. Bars will become firm as they cool. When cooled, cut into uniform squares, sprinkle with powered sugar, and enjoy!
